Easy Chocolate Pudding Recipe

The expiration date on the milk is tomorrow.  Without any cereal to eat it with, we’ve not been drinking as much milk as usual today. I hate being wasteful, so it’s time to get creative.

homemade chocolate puddingChocolate pudding to the rescue! This recipe is for 2 servings, but you can easily double it to serve more (or use up more milk).

  • 6 Tbsp sugar
  • 2 Tbsp cornstarch
  • 1/4 cup cocoa powder
  • 1 1/2 cups milk
  • 1/2 tsp vanilla extract

Mix sugar, cornstarch, and cocoa powder together in a med. saucepan. Place pan over medium high heat. Slowly stir in milk under smooth. Bring to a boil, stirring constantly. Then cook 2 minutes under thickened. Stir in vanilla extract.

Pour into serving dishes and place in the fridge to cool. Top with whipped cream before serving. Alternatively, you can serve hot off the stove, but the pudding won’t be quite as thick as it would be chilled.
